Ingredient
For the Shrimp:
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons butter
- 2 cloves garlic, minced
- 1 teaspoon Old Bay seasoning (or to taste)
- Salt and pepper, to taste
- Fresh lemon juice, to taste
- Chopped fresh parsley, for garnish
For the Grits:
- 1 cup stone-ground grits
- 4 cups water or chicken broth
- 1 cup milk
- Salt and pepper, to taste
- 1/2 cup shredded cheddar cheese (optional)
- 2 tablespoons butter
Instructions:
For the Grits:
- In a medium saucepan, bring the water or chicken broth to a boil.
- Gradually whisk in the grits, stirring to prevent clumps.
- Reduce the heat to low and simmer, stirring occasionally, for about 20-25 minutes or until the grits are thick and creamy.
- Stir in the milk, salt, and pepper, and continue to cook for an additional 5-10 minutes, stirring occasionally.
- If using cheese, stir in the shredded cheddar cheese until melted.
- Remove from heat and stir in the butter. Keep warm while you prepare the shrimp.
For the Shrimp:
- In a large skillet, melt the butter over medium heat.
- Add the minced garlic and sauté for about 1 minute until fragrant.
- Add the shrimp to the skillet and sprinkle with Old Bay seasoning, salt, and pepper.
- Cook the shrimp for 2-3 minutes on each side or until they turn pink and opaque.
- Squeeze fresh lemon juice over the cooked shrimp and garnish with chopped parsley.
To Serve:
- Spoon a generous serving of creamy grits onto each plate.
- Top the grits with a portion of the cooked shrimp.
- Drizzle a little of the garlic-butter sauce from the skillet over the shrimp and grits.
