Delicious Baked Potato Soup | Potato Soup Recipe
4 large baked potatoes, cubed and peeled.
10 slices bacon
4 chopped green onions
2/3 cup margarine
1 teaspoon salt
2/3 cup flour
1 1/4 cups shredded cheddar cheese
7 cups milk
1 teaspoon ground black pepper
1 cup sour cream
- Place bacon slices in large, deep skillet. Cook bacon over medium heat until it get brown. Drain, crumble and set aside.
- In a dutch oven, over medium heat melt margarine. Whisk in all purpose flour until smooth. Gradually stir in milk. Stir in onions and potatoes. Take to boil, stirring frequently.
- Decrease heat, and simmer 10 minutes. Combine bacon, cheese, sour cream, pepper and salt. Cook until cheese is melted by stirring frequently.
- Additional: Cook finger chips and topped to decorate.
