Ingredients for Cake:
Vegetable oil 1 1/2 cup
Pastry flour 2 cups
Granulated Sugar 2 cups
Fresh Eggs 4
Salt 1 teaspoon
Baking Soda 2 teaspoon
Chopped walnuts 4 ounces
Ground cinnamon 2 teaspoon
Raw ground carrots 3 cups
Cream cheese room temperature 12 ounces
Margarine (room temperature) 2 ounces
Vanilla extract 1 tablespoon
Powdered Sugar 1 1/2 pounds
How to make carrot cake?

For cake Preheat oven at 300 degree F or (149 degree C)
Take a large mixing bowl, and make a mixture of vegetable oil, sugar, and eggs. set aside. In another bowl, sift together flour, salt, baking soda and cinnamon. Now fold all dry ingredients into wet mixture and blend it well. Fold in chopped walnuts and carrots until well blended. Distribute batter into 3 cake layers pans (approx. 9 inch), that have been well greased. It will be approx 1 pound 5 ounces of batter per pan. Shift it in preheated oven and bake for 1 hour. Cool layer in pans for 1 hour. Store layers in pans, inverted in and in closed cupboard to avoid drying. That will be better if Layers minimum of 1 day old.
To remove the layers from pan, turn upside down and tap edge of pan. Center cake circle on top of revolving cake stand and remove paper from bottom of cake.
For cake frosting:
In a large shallow bowl, mix powdered sugar, vanilla extract, cream cheese, and margarine. Beat at low speed until thoroughly blended. Hold refrigerated and use as required.
At center of cake stand, place first layer and bottom side down. Spread approx 3 1/2 ounces of frosting on the layer with a spatula. Center 3rd layer on second layer with topside down. Using both hand, press in that way, all layers together to get one cake. Then, with spatula, spread remainder of frosting to cover sides and top of carrot cake. Refrigerate until required. You can further decorate as much as you want to beautify the carrot cake.
